For a foodie, meeting a chef is like meeting a celebrity. I am always amazed at their skills and passion for one of the hardest jobs in the world. If you have been following me on Instagram, you will remember the video of a chef cutting soba noodles at Sobaya in New York. I didn’t get a video of this chef in Kamakura, but what amazes me is he doesn’t require a board to guide him along while he cuts the thin pieces of soba noodles. It’s all done by just using his hand as a guide. No chopped fingers hopefully with the speed they cut it!
